Brussel Sprout Hash

I don't know about you but growing up, I hated Brussel Sprouts. Like probably the worst vegetable a kid would have to eat. Therefore as an adult, I never really pushed this vegetable onto my kids.

I don't know about you but growing up, I hated Brussel Sprouts. Like probably the worst vegetable a kid would have to eat. Therefore as an adult, I never really pushed this vegetable onto my kids. 

Seriously people, I could not stand Brussel sprouts. If my mom served Brussel sprouts at dinner, I would roll them under the table, aiming for the "claw" leg.  That way they were hidden and no one would be the wiser. I wish I could say that I was even extremely motivated and at the end of dinner and volunteered to sweep, so I could dispose of my dropped Brussel sprouts but I was only a kid. 

As an adult and a parent, I am working hard on finding ways to get my kids to eat food that is good and nourishing for them. I do believe that food is medicine and the better choices we make the better and healthier we will feel. I mean really who has time to be sick anymore?

Now, I do not like complicated recipes. As much as I love to cook, I love, quick and easy. If a recipe takes hours to prep and cook, count me out. So when I stumbled across this recipe, I knew I had to try it. 

Step 1:

To start you will need to grab some Brussel sprouts from the produce department. (I didn't know you could buy Brussel Sprouts here, I thought the only came from the freezer section.) Wash the Brussel sprouts. 

Step 2:

Fry some bacon! 

Step 3:
brusell sprouts that are chopped upWhile your bacon is frying, chop up your Brussel Sprouts. I use my cutting board and hand-held chopper from Pampered Chef. I also have my kids help with this step. They think it is fun to chop the Brussel Sprouts. (Sidenote- if you time this step just right, you can even talk your husband into helping. The chopping is a great stress reliever.)

Step 4:

Your bacon is fried! Now add the chopped up Brussel sprouts to your frying pan. You only want to saute the Brussel Sprouts in the bacon grease for a couple of minutes. We are not wanting to "cook" the Brussell sprouts. More so just warm them up and keeping that nice green color.  The closer to raw you can serve them the healthier they are. 

Step 5:

Chop up your fried bacon and add it to the frying pan. Mix it all in. 

Step 6: Optional 
Young Living WolfberriesI had a small handful of dried Wolfberries to my Brussel sprouts hash for a little color and add vitamins and minerals. 
You are done! Now kick back and relax! You have cooked an amazing and healthy side dish your kids will love.
