Sometimes dinner doesn’t need to be complicated to be really good. These loaded pierogies are one of those easy meals that feels a little indulgent but comes together with simple ingredients.
Start with a box of frozen Mrs. T’s pierogies. Place them in a bowl of cold water to thaw while you prep everything else.
When they’re ready, heat a cast iron skillet and sauté the pierogies in up to ¼ cup butter until they turn golden and slightly crispy.
Once browned, transfer the pierogies to a casserole dish.

Next, cook your protein. Ground beef works great, but we also love using thinly sliced beef like you would for cheesesteaks. Cook the meat in a skillet until browned, then layer it right on top of the pierogies.

Place the dish in a preheated oven and bake for 15 minutes.
Remove from the oven and top everything with up to 2 cups of freshly shredded cheddar cheese. Put it back in the oven for about 5 minutes, just until the cheese is melted.
Now it’s ready to eat.
We like to top our loaded pierogies with fresh sliced tomatoes, a dollop of sour cream, and chopped chives. Bacon would also be a great add-on, but I was being a little lazy this time.

It’s simple, filling, and one of those easy comfort food dinners that everyone ends up loving.
