Homemade Italian Dressing
Italian Dressing is one of my go to marinades. It is easy and quick to make adds plenty of flavor and uses it uses spices and ingredients I usually already have.

Give this recipe a whirl and see what you think. 

What You Need:
3/4 Cup Olive Oil - substitute the oil of your preference
1/4 Cup Red or White Wine Vinegar
1 teaspoon Garlic Powder
1 teaspoon Orgeano
1 teaspoon Basil 
1/2 teaspoon Onion Powder
1/2 teaspoon Crushed red pepper
3/4 teaspoon salt
1/2 teaspoon pepper 
1 teaspoon lemon juice. 
What’s Next:
In order to keep cleanup to a minimum, I dump all the ingredients into a clean reused glass bottle. Be sure it has a tight closing lid, you don’t want to marinade the kitchen. A mason jar work well too. Be sure you leave a little room for shaking.  

I start at the top of the ingredient list and work my way down. Once everything is in, tighten the lid and give it a good shake. 

I personally think this dressing tastes best once the flavors have had time to mingle. But if you are in a pinch for time, use it immediately.

Shake your bottle before each use - the oil and vinegar will separate. Don’t worry, that is normal. 

My Favorite Way To Use It:
My favorite way to use this Itialian Dressing is to marinade chicken tenderloins or breasts. 
I put the chicken to a glass dish, and lightly sprinkle it with kosher salt - this is called dry brining. Place it in the fridge overnight and let the salt do its job.

In the morning, I pour a healthy dash of the Italian Marinade over the chicken. Enough to coat both sides. Put it back in the fridge and let it rest throughout the day. 

I do not use the entire bottle. If you are new to cooking or like to follow measurements, start with 1/4 cup of Itaian Dressing and add more if needed to cover your chicken.

When I am ready to cook the chicken, I fire up the grill. 

Here is my secret tip.
Before the chicken goes on the grill, I scoop the remaining dressing from the bottom of the dish into a small bowl and mix it with one spoonful of mayonnaise. There is no need to waste perfectly good marinade. 

Mix it together well then coat both sides of your chicken with the italian dressing and mayonniase mixutre. The mayonnaise helps keep the chicken from drying out. 

Now it is cook time, be sure your chicken is cooked throughly and reaches an internal tempaerature of 165 degrees.   

You can also cook this recipe in the oven. Preheat your oven to 350 degrees and place your chicken into an oven safe baking dish. Cook time really depends on the cut and size of your chicken. Chicken breasts may take upto 30 minutes or longer while smaller cuts will be done a lot sonner.  Be sure your chicken reaches 165 degrees internally to ensure it is cooked properly.
